Pampore: The Saffron Capital of the World

Why Kashmiri Saffron is the Best

Kashmiri saffron has a higher concentration of **Crocin** (the color-giving pigment) and **Safranal** (the aroma-giving compound) compared to Iranian or Spanish varieties. This is due to the unique volcanic soil and climate of the Pampore plateau. It takes over 75,000 flowers to produce just one pound of saffron, all of which are hand-picked at dawn.

The Three Grades of Saffron

• Mongra: The highest grade. It consists of the deep red stigmas only, with no yellow parts. It has the strongest color and aroma.
• Lacha: A mid-grade saffron where the red stigmas are attached to the yellow styles. It is less intense but still very high quality.
• Guchhi: Saffron stigmas tied in bundles. It is often used for decorative purposes or in traditional recipes.

How to Test for Purity

Don't be fooled by cheap imitations (often dyed corn silk). Here is the expert test:

• The Water Test: Place a few strands in warm water. Pure saffron will slowly turn the water yellow, while the strands themselves remain red. If the water turns deep red instantly or the strands lose their color, it is fake.
• The Aroma: Real saffron smells sweet (like hay and honey) but never tastes sweet. It should have a slightly bitter aftertaste.
• The Shape: Authentic saffron strands are trumpet-shaped at one end.
